I’d like to say that Pomerol is my « home away from home », where it all began my relationship with wine.
This « Blue » version is closer to the traditional modern Pomerol, with a longer fermentation period than I would have allowed myself for any other vintage...

rump with morel mushrooms for example.
Recommendations
Serve between 16 and 18°C.
